Create a thick sponge
1 cup flour
1 tablespoon yeast
1 tablespoon sugar
1/2 cup warm water

Mix and cover and set aside for 30 minutes
1 teaspoon salt
3 cups flour
Knead and add flour until dough is not sticky
Add flour or water as required to adjust
Knead another 10 minutes

Ball up and let rise another 75 minutes

Knock down and divide in tennis ball sized pieces
Form into donuts
Let rise 30 to 60 minutes

Meanwhile bring hot water to boiling in a shallow pan with lots of salt and some honey

Slide uncooked bagels into boiling hot water bath and cook 2 to 3 minutes per side
Set aside to completely drain

Sprinkle cornmeal on cookie sheet
Place bagels on cookie sheet
Brush top with egg wash
Sprinkle with sesame seeds
Bake at 400° for 25 to 30 minutes
