Use small nonstick pan
Bring temperature of pan up to 280° – 320°
. Small drop of water should splatter
Put in 1 tablespoon cold butter
Move butter around to coat pan
Add egg to medium hot pan
Cover with lid to set the yolk and cook the white a bit.
If you want it over easy, flip it and let it cook for 15 seconds
Plate up, garnish with a sprig of parsley, and serve with toast.
