Braised Short Ribs

INGREDIENTS

  • 16-20 OZ Short Ribs
  • 2 TBL bacon fat
  • 1/4 C Grandpa's Thunder Powder, Arghh Powder, or other.
  • 1/4 C brown sugar
  • 1 carrot
  • 1 onion
  • 1 celery stalk
  • 1 red bell pepper
  • 4 cloves garlic
  • 2 C burgundy wine
  • 4 C chicken stock
  • 2 bay leaves
  • 2 TBL tomato paste

STEP BY STEP

  1. Combine Thunder Powder and brown sugar
  2. Cut pieces apart if they are in a large slab.
  3. Season each piece liberally with Thunder Powder mixture
  4. Sear over VERY hot skillet with bacon fat on sides until blackened
  5. Lower heat to medium
  6. Remove ribs, and add chopped carrots, onion, celery, bell pepper
  7. Saute 8 minutes
  8. Add chopped garlic and tomato paste
  9. Saute another 5 minutes
  10. Add 2 C burgundy wine
  11. Add 4 C chicken stock
  12. Put short ribs back into the pot
  13. Bring up to boil and move to stove pot
  14. Cover with foil
  15. Braise 325° for 3 hours
  16. Remove shot ribs
  17. Strain braising liquids
  18. Discard solids, or use for Hobo Bisquits
  19. Reduce braising liquid to about 1/2
  20. Use 1 C of braising liquids to create an au jus
  21. Add 1 TBL honey
  22. Add 1 TBL hoisen
  23. Add 1 TBL cold butter
  24. Serve with horseradish and mashed potatoes

NOTE: Get your meat from a butcher, not the supermarket.
