Cacik (Turkish Yogurt soup)

Ingredients for multiple servings:
1 cucumber
½ tsp dill
1 TBL mint (finely diced
2 CU plain yogurt
1 TBL white vinegar
1 tsp EVOO
pinch of salt

1. Peel cucumber and scoop out seeds
2. Slice cucumber into small pieces or slices
3. (ALT: Grate cucumber)
4. Add yogurt and spices
5. Blend until smooth.
6. Fold in cucumbers
7. Refrigerate at least 3 hours to blend flavors
8. Serve cold with a dusting of mint on top.

Notes We’ve always said “Kay Sick,” but when visiting in Istanbul, we were told that the proper way to say this is “Jay Jick”
