Cast Iron Corn Bread

Mix 1 C buttermilk
2 eggs
1/4 C milk
1 stick melted butter

In separate bowl mix 1 1/4 C cornmeal
3/4 C AP flour
1/4 C sugar
1/2 tsp salt
2 tsp baking powder
1/2 tsp baking soda

Combine wet and dry ingredients – DO NOT OVERMIX
Pre-heat cast iron skillet (in oven at 425)
Put 2 tabs butter
Quickly add mixed batter and smooth out
Reduce heat to 350 degrees and cook 25 minutes
