Cauliflower Steak

Cut cauliflower head down middle
Remove leaves, etc – … pieces
Cut 1 1/2 inch thick steak

Braise in White Wine, veggie broth
Top with bay leaves, Salt, pepper, evoo
Cover and Cook 1 hour at 350°

Sear in pan over hot oil
Add evoo to steel skillet for 5 minutes each side to blacken

Plate and Top with pistou

Pistou Topping
Lots of Green olives, half as many Kalamata olives, orange segments with juice, lemon juice, golden raisins, parsley, garlic slices, salt, pepper, evoo
. Mix and marinate overnight in the fridge
