Chicken Roll Casserole

4 chicken breasts – butterfly and pallard
2 TBL each breast
1 small onions – diced
dash cinnamon
EVOO
salt and pepper to taste
Grandpa's Thunder Powder, Arghh Powder, or other. to taste

1 C orange juice OR 1/2 C juice and 1/2 C white wine
3 TBL flour
2 TBL grated orange rind
Grated cheese
1 large avocado

Pallard chicken breasts and set aside on butcher paper
Saute onions in EVOO
Stir in 1 TBL Thunder Powder
Salt and pepper to taste
Divide cooked mixture in quarters
Spread onto each flattened breast and roll into tight roll – afix with toothpicks
Sear rolled breasts in hot skillet with butter, then place in baking casserole
Bake at 350ยบ for 20 minutes
Meanwhile add flour to skillet and cook till browned
Add orange juice and wine
Pour over chicken and bake another 25 minutes
Meanwhile, cook avocado and slice
Cover finished chicken with grated cheese and avocado and bake 10 minutes more
Sprinkle top with grated orange rind and serve
