Cucumber Sauce (for fish or meat-pref cold)

¾ cu cream (sour cream optional)
2 tbsp vinegar or lemon juice
¼ tsp salt
1/8 tsp paprika

Instructions
1. Beat until stiff ¾ cup cream or sour cream (if using sweet cream add slowly).
2. Add 2 tbsp vinegar or lemon juice, season w salt and paprika.
3. Pare, seed and cut finely & drain well 1 lg cucumber.
4. Add to sauce.
