IMPORTED – NOT YET DEBUGGED

1 8-inch piece kombu, about 1/4 ounce
7 cups water
112 cup dried bonito flakes
1112 tablespoon mirin wine
11/4 teaspoons low-sodium tamari
1 teaspoon salt
1 teaspoon sugar
11/4 teaspoons rice vinegar
1. Soak kombu in 1 cup water at lea.5t 2 hours or overnigbt. Discard water .
2. Place kombu and 6 cups water in~!large saucepan. Bring to a -boil. Remove kombu
and add bonito. Boilfor2 minutes. Remove from beat and let sit 5 minutes.
3. Add remaining ingredients and stir. Strain to remove b~to flakes.
Makes 6 cups, each containing approximately:
10 calories
2 gm. carbohydrate
Trace fat
O mg. cholesterol
Trace protein
374 mg. sodium
O gm. fiber

and add bonito. Boilfo! 2 minutes; Remove from beat and let sit 5 minutes.
3. Add remaining ingredients and stir. Strain to remove bo-nito flakes.
Makes 6 cups, each containing approximately:

Trace protein
