Enchilada Sauce – Several Recipes

You can easily double this recipe and can the extra.  Put canning jars (not lids) through the dishwasher and time the cycle so that it finishes just when you finish your enchilada sauce.  When sauce is finished, put the lids into a bowl of nearly boiling hot water for 30 seconds.  Pour hot sauce into “sterile” jars, and put the lid on.  For those jars that “PING” the sauce will stay on the shelf for up to a month.  PLEASE NOTE:  YOU MUST ELIMINATE THE MEAT if you are planning to can your sauce in this manner.

Easiest Ever Enchilada Sauce

easy-enchiladaWith only four ingredients, this goes together quickly and tastes great.

INGREDIENTS

  • 2 TBL butter
  • 2 TBL flour
  • 1 small can Macayo’s green chilies – crushed
  • 1 C chicken broth

STEP BY STEP

  1. Crush or puree your green chilies.  Set aside.
  2. Melt the butter and flour and cook until it starts to brown
  3. Stir in your green chiles
  4. Whisk in your chicken broth
  5. Stir until thickened

Grandpa’s Red Enchilada Sauce

This recipe takes a little bit of time to make, but it is actually very easy.

INGREDIENTS

  • 1/2 C dried ancho chiles (5-6 dried chilies)
    Remove stem and seeds – tear apart
  • 1 TBL EVOO
  • 1 TBL butter
  • 1/4 lb ground pork
  • 1 tsp each – cumin, corriander
  • 1/2 tsp salt, pepper, garlic powder
  • 1/4 C grated or minced onion
  • 4 cloves of garlic
  • 1 bay leaf
  • 1 tsp chili powder
  • 1 tsp cumin
  • 2 TBL tomato paste
  • 2 TBL flour
  • 1 can tomato pieces
  • 2 C broth
  • 2 tsp corn starch – not added yet
  • juice from two limes – not added yet
  • 1 fist full of fresh cilantro – not cooked

STEP BY STEP

  1. Heat EVOO and butter in a large deep skillet
  2. Add the dried chiles – cook till softened
  3. Add onion and tomato paste – cook till onion is softened
  4. Add pork and cook until browned
  5. Add bay, powdered and flaked ingredients – heat till aromatic
  6. Add flour – cook till browned
  7. Add canned tomato – stir till incorporated
  8. Add broth – stir till incorporated
  9. Simmer for abut 15 minutes.
  10. Meanwhile, mix corn starch well with the lime juice
  11. Drizzle corn starch mixture into the pan, stirring well
  12. Cook until thickened
  13. Add fresh cilantro
  14. Blend (puree) in a blender

Pretty Darned Easy Enchilada Sauce

INGREDIENTS

  • 1 TBL ground chili pepper (hot or mild – not black)
  • 1 TBL ground cumin
  • 1 CU Broth or Bullion
  • 2 tbl butter
  • 1 tbl flour
  • 2 tsp corn starch (might not use) – in a slurry of 1 TBL water
  • Garnish – parsley, cilantro or chives

STEP BY STEP

  1. Mix all ground ingredients
  2. Melt butter in pan
  3. Add broth to pan
  4. Immediately start SLOWLY adding powdered mixture, stirring as you go
  5. Bring up to heat. As this is starting to warm, add 1 TBL water to corn starch
  6. Stir for a maximum of 10 minutes minutes, or until it thickens.
    If it doesn’t thicken after 8 minutes, add corn starch slurry and stir for two more minutes
  7. Pour over top of burrito.
  8. Garnish and serve

Mild Green Enchilada Sauce

INGREDIENTS

  • 1/2 can Chicken Broth
  • 1/2 CU Margarita Mix (or below, not both)
    (or 1/4 CU lime juice and 1/4 CU water)
  • 1 sm can diced Green Chiles
  • 1/4 CU All Purpose Flour (mixed with 1/2 CU water)
  • 2 TBL mild chili powder

STEP BY STEP

  1. Bring chicken broth and margarita mix (or lime mixture) almost to a boil
  2. Add can of diced green chilis
  3. Add chili powder
  4. Mix well
  5. SLOWLY add flour/water mixture stirring continually
  6. Cook until thickened
  7. Remove from heat and puree in blender

Grandpa’s Green Enchilada Sauce

INGREDIENTS

  • 1 Onion . Sauteé
  • 4 cloves Garlic
  • 2 Poblano . Roasted
  • 3 Jalapeño peppers
  • 4 Tomatillos . Soak, peel, sticky, rinse
  • 2 C Chicken stock
  • Fresh cilantro

STEP BY STEP

  1. Soften onion in EVOO in a hot skillet
  2. Add garlic, poblano, jalapeño, and tomatillos
  3. In 5 minutes add chicken stock
  4. Simmer 15 more minutes
  5. Remove from heat and add fresh cilantro
  6. Puree in food processor or blender

Hot Green Enchilada Sauce

  • Use the recipe above for Grandpa’s Green Sauce
  • Add 2-3 habañero peppers

Tomatillo Sauce

 

  • Use the recipe above for Grandpa’s Green Sauce
  • Remove 2 jalapeño peppers and 1 poblano pepper
  • Add 2 more tomatillos
