Enchiladas

SELECT YOUR FAVORITE ENCHILADA SAUCE then proceed with recipe.

Preferred for this recipe is the Tomatillo Sauce

Beans
Stock pot
Onions and lots of onions
Simmer 2 hours
Drain and add lots of evoo
Roughly blend
When you are ready to serve heat up in a pan.
. They will darken.

Enchilada
Dip corn tortilla in sauce
Pan fry about 30 seconds
Put on cookie sheet
Top with cheeses
Roll up and put in baking dish
Top with more sauce and cheese
Bake at 400 for 5 minutes

Side Salad
Chopped tomato
Onion
Avocado
Lettuce
Radish
Cilantro
Sour cream
Lime juice
Salt-and-pepper
