Brine chicken breasts in water plus one cup salt and one cup sugar for one hour
Create dipping batter. 1 cup flour, 1 cup cornstarch, 1 cup water plus salt and pepper
Dry chicken thoroughly, then dip in sifted flour/corn starch mixture.
Dip and cornstarch mixture.
Heat peanut oil to 365°F
Dip and fry chicken – Keep temp between 365° and 175°
Roll in Panko bread crumbs, then set aside to cool for a little bit, then fry again
Mix honey and cayenne sauce
Toss just before serving
