To buy: Shiny, but not milky

Nice thick pieces
Sear on a skillet about 3 minutes top and bottom
When seared on all sides cover and turn off heat
Let set about 10 minutes

Vinaigrette
Grapefruit juice
Whisk in 1 tbl evoo
Diced shallot
Parsley
Cilantro
At end add back in grapefruit pieces

Beets and avocado love citrus
Roast beets . Red and yellow
Avocado

Serve over salad greens
Top with Vinagrette
