This recipe came from Judy Green-Davis. She’s made it for years. I tried it. I can see why!

Sauerkraut – Quick Kraut

Ingredients

1 head cabbage
1 CU apple cider vinegar
3 TBL sugar
1 tsp salt

Instructions

1. Shave cabbage thin. Discard hard core.
2. Combine vinegar, sugar and salt.
3. Add cabbage and marinate for 2 hours (stirring occasionally)
4. Add 3 CU water, and bring to boil
5. Simmer 15 minutes
6. Strain and serve hot
