This is one of those easy casserole recipes you’ll want to make over and over again. Stupidly Easy Mexican Casserole is a deliciously creamy and cheese Mexican casserole with ground beef, tortilla chips, sour cream, salsa, cheese and more! All you have to do is brown the ground beef, assemble the casserole in layers, and bake until hot. Serve this ground beef casserole recipe as a dinner or even a dip for tortilla chips.

Ingredients

1 1/2 cup crushed tortilla chips
1/2 pound ground beef
1 1/2 cup salsa
1 can chili with beans
1 (8-ounce) tub sour cream
3/4 cup canned diced tomatoes, drained
Black olives
1/2 cup shredded Cheddar cheese

Instructions

Preheat oven to 350 degrees F.
Spread crushed tortilla chips along the bottom of a greased 8 x 8 inch baking dish.
Brown the ground beef in a medium skillet; drain. Mix in the salsa and chili with beans. Spread over the tortilla chips.
Spread sour cream over the meat and top with diced tomatoes, black olives, and shredded cheese.
Bake uncovered for 30 minutes, or until bubbly.

Serves: 6-8
Ingredients

1.5 lbs ground beef
1 medium onion, diced
1 can corn, drained
1 can black beans, rinsed and drained
1 package taco seasoning
8-12 corn tortillas
2 cans rotel – whatever your favorite flavor is
2 cups shredded Mexican cheese
Garnish:
Cilantro
Salsa
Sour Cream
Tortilla chips

Instructions

Cook ground beef and diced onion. Drain off excess fat, and then add the taco seasoning, corn, beans, and rotel.
Put a layer of tortillas down in a 10×13 inch baking dish. Layer meat mixture on top. Sprinkle half of cheese on top. Layer more tortillas, then more meat, and finish with the remaining cheese.
Bake at 350 for 20-25 minutes, or until the entire mixture is hot and the cheese is melty. Remove from oven, let cool for 10 minutes, and then serve with garnishes.
