UDON – 100% wheat flour – From Osaka area

SOBA – 20% white, 80% buckwheat – from Tokyo area – nutty, low gluten, a good lunch noodle

SOMAN – wheat, thin, angelhair, good summer pasta – Cook and chill

RAMEN – wheat, water, egg, soy, vinegar, mustard

Cook noodles separately because it will make water starchy
