Grandpa’s Homemade Pasta

Pasta
3 C flour
3 eggs . Separated . one white and four egg yolks.
. Keep two egg whites for an omelet in the morning
1 TBL oil
1 TBL salted butter
Salt

Put into Kitchen Aid
Mix on high
Put in water till it comes together
Mix on low for 10 more minutes

Knead and form into ball
Wrap in plastic
Fridge for 30 minutes to relax

This recipe is transcribed and adapted from Lidia’s Italy

To run through pasta machine you will need to roll, fold, flour, repeat, repeat, repeat .. About 10 times on widest setting.
You will notice pasta becoming less crumbly.
At this point step down pasta thickness, one number at a time, for desired thickness.

Once pasta dough is


Homemade Pasta
2 C White flour in food processor
1 egg plus 1 tbl EVOO
Blend
Drizzle water until it starts to come together

If too sticky, add a bit more flour
Knead util it becomes springy
Wrap in plastic for 30 minutes

Roll and cut into racquetball sized balls
Roll, fold, repeat about 8 times
Cut and flour
Let dry for about an hour
Cook in large pot of boiling water
Only needs to cook 3-5 minutes


Dough
2 c Flour, 2 eggs, 1 tsp salt, 1 tbl EVOO
Bring together
Roll and fold by hand

In a hurry? Food processor version…
2 c flour
Pinch of salt
3 eggs
Pulse
Evoo
Add flour or water as needed

Do not over work it

Roll with 00 flour to keep from sticking

Fazzoletti
Roll to thin sheets
Cut into 1.5 inch squares
Using single chop stick
. Roll into tube (on the bias) on textured surface

Garganelli

Farfalle
Cut into 1.5 inch squares
. One side is wavy
. Pinch into bow tie

Trofie
Roll thin strips of pasta into curls

Cavatelli
Use fork to shape thick 1×1 piecres into ears

Filled ravioli
Lay out sheet
Put small amt of filling

. Ricotta, meat, cheese, etc. with an egg
Spray or egg wash
Put top sheet in place
Cut and secure

make hollow nest with piped cheese
Put yolk in center
Cover with pasta and seal
Cook 4 minutes

Tortelli
2 inch squares
Ricotta in center
Fold to make triangle,
then bow tie around finger
Lat flat to dry

Pieces and scraps into freezer for later

Make nest of flour
Beat egg in well/nest
Bench knife until it starts to come together

Cut into equal sized pieces, depending on how you will use the pasta – golfball sized pieces is a good size
Roll, fold, repeat about 8 times
