Easy Pickling – OVERVIEW

The basic ingredients are

  • 1 C vinegar, 1 C sugar, 1 TBL salt
  • Heat to simmer and pour over items to be pickled

STEP BY STEP

Collect vegetables that you want to pickle

  1. Cut veggies into similarly sized pieces (1/4 – 1 inch in size)
  2. Put into large mixing bowl
  3. Toss with large amount of salt
  4. Let set two hours
  5. Meanwhile, create a 1:1 simple syrup – 1 C water, 1 C sugar
  6. Rinse veggies very well with massive amounts of water
  7. Place in canning jar
  8. Cover 1/2 with syrup and 1/2 with cider vinegar
  9. Let set overnight
  10. Will keep for up to 2 weeks.

ADDITIONAL INFORMATION

Simple Syrup

  1. Heat 1 CU water
  2. Add 2 CU sugar
  3. Stir until dissolved
  4. Add 1 CU ice water
