Pork Belly

Remove skin
Cook skin and meat separately

Salt meat generously
Flavor with malted barley and dried mushrooms
Crush together
Coat meat
Lay on full head of garlic
Coat with malt extract and vinegar
Cook 400° for 10 minutes
Reduce heat to 220°
Cook 8-10 hours

Crackling
Cook . Simmer gently 6 hours
Refrigerate 2 hours
Scrape off fat
Dry in oven at 100° 3-4 days
Deep fry dried pieces a few seconds
