Potato Pancakes

Laakes are thinner and crisp
These will be fried in small one inch loose piles

2 Grated potatoes
1 beaten egg
1/4 C Cream or Buttermilk
1/4 C finely grated onion with its juice
Nutmeg, salt and pepper

Fry, then keep in over till served

Alt
Mix 1/4 c flour, 1/4 c yogurt, 1/2 tsp baking soda, 1 egg, salt
Add grated two russet potatoes and 1/4 onion
Let rest 15 minutes
Strain rendered liquid
Form into 1/4 inch patties
Fry until golden brown

Ingredients:
½ cu potatoes (mashed)
¼ onion
salt
olive oil
apple sauce

Instructions:
Mix potatoes with onion and salt. Cook in olive oil in small almond shaped dollops. Flip to golden color.

Special Steps:
Top w/apple sauce.
