Pretzels

2 TBL yeast
2 C warm water

6.5 C bread flour
1/2 C brown sugar
4 TBL salt
1/2 C Butter . Cut in

Add liquids

Finish on bench
Rise 8 hours in fridge

Let dough thaw 1 hour
1/2 C baking soda
8 C hot water
1/4 C brown sugar
1/2 C Beer
Simmer

Flatten to thick sheets
Cut into strips
Roll into 22 inch strips
Twist twice then form

Spider strainer 30 seconds
Put into baking sheet
Brush w melted butter
Top with salt, cheese, pepper, poppy seeds
Bake 450° 5 minutes
Rotate pan
Bake 5 minutes more
