Roasted Chickpeas – Video

Mix the following and set aside:

  • 1 TBL EVOO
  • juice and zest from 1 lemon
  • 2 TBL Parmesan – grated
  • 1 TBL chopped parsley
  • 1 tsp coarse salt
  • 1 tsp granulated sugar


  1. Rinse one can of chickpeas
  2. Let drain on a paper towel for 5 minutes
  3. Heat 3/4 inch of oil in a skillet up oil to 360ยบ
  4. Fry chickpeas for 3-5 minutes
  5. Remove and return to the paper towel to drain for 5 minutes
  6. Put into large mixing bowl
  7. Toss with prepared spice mixture
