Roasted Chickpeas – Video

INGREDIENTS

Mix the following and set aside:

  • 1 TBL EVOO
  • juice and zest from 1 lemon
  • 2 TBL Parmesan – grated
  • 1 TBL chopped parsley
  • 2 tsp coarse salt
  • 1 tsp fine orange zest
  • 1 tsp granulated sugar
  • 1 TBL maple syrup
  • Optional:  1/2 tsp cayenne pepper

STEP BY STEP

  1. Rinse and drain one can of chickpeas
  2. Let dry on a paper towel for 5 minutes
    FRIED
  3. Heat 3/4 inch of oil in a skillet up oil to 360º
  4. Fry chickpeas for 3-5 minutes
  5. Remove and return to the paper towel to drain for 5 minutes
  6. Put into large mixing bowl and toss with prepared spice mixture
    BAKED
  7. Bake 30 minutes at 350º
  8. Put into large mixing bowl and toss with prepared spice mixture
  9. Return to baking sheet and bake 30 more minutes
