Sauteed Zucchini

  • Zucchini or squash – Cut into 1/2 inch cubes
  • 1 TBL Butter
  • 1 TBL Olive oil
  • 2 tbl Lemon juice
  • 1/2 tsp dried dill


  1. Heat butter in your fry pan
  2. Add oil – this will keep the butter from burning
  3. Toss chopped zucchini in salt
  4. Add zuchinni to hot pan
  5. Cook 4-6 minutes
  6. Add 2 tbl lemon juice near end add ½ tsp dried dill
  7. Serve like this as a dish, or puree in a blender and strain and serve as a side soup
