Savory Souffle
Soufflé . Martha Stewart

Start with béchamel
. 2 TBL Each Flour, butter, with salt to taste
Brown over stove
. Add 1/2 C WARMED Half and Half or whole milk
Return to a simmer

Add to a glass bowl and add 1 TBL softened buttter
Add two egg yolks
Add cheeses ementhal, comté, appenziller, sharfe maxx . Cut into small cubes
. Use whatever cheese you have
Heat oven to 375°
Beat 3 egg whites to soft peaks
Add whites and third yolk into béchamel
Cook for 45 minutes
