Shrimp Cocktail Sauce

3 cloves Garlic
1/2 Red onion
Drizzle with EVOO and bake at 400º for 15 minutes

1 can roasted tomatoes (juice drained)
1 TBL brown sugar
1 TBL balsamic vinegar
1/4 C Valentina hot sauce
1 tsp Tabasco
1 tsp salt
2 TBL fresh lime juice
Finely chop up garlic and onion and add to the above

Alt ingredients:
1-2 TBL horseradish (alt: Wasabi powder)
2 tsp honey (alt: granulated sugar)
1 tsp cayenne pepper (alt: chili powder)


Mix everything together
Best if it sits for at least an hour to meld
