Simple Simple Canned Corn Chili

1 LB ground beef or hamburger meat
1 large red onions (slivered)
1 TBL oregano
1 can whole-kernel corn
1 can tomato puree (Hunts or Progresso)
1 can diced tomatoes
1 can tomato sauce
1 TBL Vegetable oil
1 tsp chili powder
1 TBL sugar
3 bay leaves


1. Brown the meat, and set aside
2. Saute onions until edges start to blacken
3. Add oregano to onions
4. Cook 5 minutes
5. Drain corn and add to the mixture
6. Add everything else and heat mixture
7. Cover and simmer for 1 hour
8. Add meat, uncover, and simmer for another hour to reduce liquid

Serve with Tabasco


I personally don’t care for kidney beans, so I substitute a can of whole-kernel corn for the kidney beans normally used in a chili recipe.
