SELECT YOUR FAVORITE ENCHILADA SAUCE then proceed with recipe.

Shred cooked chicken

Put half into skillet

Soft fry corn tortillas in hot oil

Dip tortilla in enchilada sauce . Both sides
Put into tortilla
Shedded cheese
. Mozzerella, queso fresca, monterey jack
Chicken
Roll up and line up in casserole

Top with more enchilada sauce and cheese

Pickled Onions
Slivered red onion
Cider vinegar
Salt
Oregano
Let rest 30 minutes
