Soft Molasses Cookies

Title of Recipe: Soft Molasses Cookies

2 ¼ cup flour
1 tsp ginger
1 tsp cinnamon
¼ tsp salt
½ cup sugar
2 tsp baking soda
2 tbl hot water
½ cup shortening
½ cup molasses
1 egg
raisins (nuts optional)

Sift together flour, ginger, cinnamon and salt. Dissolve baking soda in 2 tbsp hot water. Mix shortening, sugar, molasses and egg together until creamy. Mix in flour mixture alternately w/ 1/3 cup cold water, then mix in soda. Add ½ cup raisins or nuts. Drop on greased cookie sheet. Bake at 400° for 12 minutes.
