Notes for a Basic Soufflé

These notes are (for now) just for me. You can use them, but don’t be mad that there is not more information here.


Separate Eggs

Egg yolks, sugar, salt, vanilla, and orange zest
(one TBL sugar each egg)

Egg whites – whip to peaks
Add 1/2 TBL sugar each near the end
Fold above together

Creat Roux
Melt 4 TBL butter into hot oven-safe pan (medium high)
Mix and 1/4 cup flour and stir until it starts to brown
Add 1 cup milk and stir until it starts to thicken

Temper roux into yolks, then combine
Pour egg mixture into pan
Cover and cook two minutes over low heat
Keep covered and move into oven preheated to 375 degrees
Cook 6 minutes
