Steel Cut Oatmeal

Steel cut: Raw oats, cut with steel blades
Rolled: Steamed and softened, then rolled flat
Instant: rolled oats pre-cooked, then dried . Add boiling water

1 TBL butter
1/2 C steel cut oats
1.5 C boiling water

1/4 C whole milk
1/4 C low fat buttermilk
1/4 C cottage cheese

1 tsp brown sugar
1/4 tsp cinnamon

  1. In a large saucepan, melt the butter and add the oats
  2. Stir for 2-3 minutes to toast
  3. Add the boiling water and reduce heat to simmer
  4. Keep at low simmer for 25 minutes, stirring once at about 5 minutes
  5. Add buttermilk and cottage cheese
  6. Stir gently to combine
  7. Cook for an additional 5 minutes
  8. Spoon into a serving bowl
  9. Top with remaining ingredients.
