Strawberry Rhubarb Soup

INGREDIENTS

  • 1 C Strawberries
  • 1 C Rhubarb – De-stringed and chopped
  • 1/4 C sugar
  • 2 C Watermelon
  • Dash of Vanilla
  • 1 TBL Lemon

STEP BY STEP

  1. Cut Strawberry & Rhubarb in pieces, then toss in sugar
  2. Mix watermelon pieces with vanilla and lemon
  3. Use potato masher to mash it all together
  4. Cook / simmer 1 hour
  5. Blend and press through strainer
  6. Serve cold
