Stuffed Sweet Potato

This is a long process, but a very simple one.  This is a good recipe for a young chef.

  1. Wash your sweet potatoes
  2. Poke lots of holes with a fork on all sides of the sweet potatoes
  3. Cut in half and spread butter on the cut side of the potato
  4. Bake in preheated 450º oven for 30 minutes
  5. Let potato cool a bit before the next step
  6. Using a spoon, carefully scrape out much of the meat of the potato and put into mixing bowl
  7. Add the following – per potato
  • 1 TBL butter
  • 1 TBL brown sugar
  • scant salt, cumin, pepper, chili powder
  • 1 scallion
  1. Refill boats with mixture
  2. Bake another 30 minutes
  3. Top with chorizo and crema Mexicana
