Tamarind for Phad Thai Noodles

One block Tamarind
– Fibrous dehydrated paste
3 TBL Fish Sauce
3 TBL Sugar
1 TBL Rice Wine Vinegar
1 tsp Cayenne Pepper
2 TBL Peanut Oil

From America’s Test Kitchen


1. Rehydrate Tamarind in ¾ CU boiling water
2. Strain to remove all stems and seeds
3. Press pulp through
4. Mix with other ingredients
