Veggie Souffle

INGREDIENTS

  • 2 eggs – separated
  • 1 small onion – diced
  • EVOO
  • 1 CU shredded cheddar/mozzarella cheese
  • 1 tomato (diced) or 1 can San Marzano tomatoes – crushed
  • 1 TBL chives
  • 1 tsp oregano
  • 1 tsp sugar

STEP BY STEP

  1. Saute onions IN EVOO
  2. Beat egg whites to medium peaks
  3. Fold veggies into egg whites
  4. ( Add options below if desired )
  5. Combine everything ( except cheese ) in casserole dish with all other ingredients
  6. Top with shredded cheese
  7. Bake @ 350º for 40 minutes
  8. Let cool 5 minutes before serving

OPTIONS:  Add mushrooms, black olives, or artichokes
