INGREDIENTS
- 1 egg
- Zest and juice from two lemons
- 2 TBL EVOO
- 1 tomato (pieces)
- 1 CU cut asparagus
- 2 green onions (chopped)
- 1/2 CU cheddar cheese
- 2 cloves garlic (minced)
- scant paprika
- 1 TBL cilantro (chopped)
- 1/4 CU Monterey jack cheese
- 1/4 CU Parmesan cheese
STEP BY STEP
- Whisk together egg, chredded cheddar, milk and EVOO
- Combine everything else except the Monterey and Parmesan cheeses
- Put in baking dish
- Top with Monterey and Parmesan
- Bake at 350 for 30 minutes
- Add bread covered with garlic butter in oven
- Cook 10 minutes more
