- 8 Roma Tomatoes – seeds removed
- 3 cloves Minced garlic
- 1/2 Chopped onion
- 1/2 tsp Corriander
- 1/2 tsp Oregano
- 1/2 tsp Thyme
- Salt & pepper
- Drizzle with EVOO
- Bake in glass baking dish for 2 hours @ 325º
- Increase heat to 400º and cook another 30 minutes
- Run through a food mill
- Add 1 C white wine and heat over medium heat
- Simmer 5 minutes
- Serve over pasta
