INGREDIENTS
- 6 large cucumbers
- 6 large onions
- 1/2 PT white vinegar
- 1/2 C brown sutar
- 1/2 tsp mustard seed
- 1/2 tsp celery seed
- 1/2 tsp grated ginger
- 1/2 tsp turmeric
- 1/2 tsp salt
- scant black pepper
STEP BY STEP
- Mix 1/2 QT water and 2 TBL canning salt
- Peel onions – Slice them into thin pieces
- Use a crinkle cutter and cut cucumber medallions
- Brine cucumbers and onions for 3-4 hours
- Meanwhile, combine vinegar, brown sugar, mustard and celery seed and bring to a boil.
- Reduce heat and simmer 2 minutes
- In a bowl combine ginger, turmeric, salt and pepper
- Stir in 1/4 C of the hot vinegar mixture
- Use a spider strainer and move cucumbers and onions to canning jars
- Pour the hot vinegar over top
- Put on sterile lid and seal
