- Leftover burrito
- Marinara sauce or salsa
- Provalone cheese

STEP BY STEP
- Cut burrito into 3/4 inch thick medallions
NOTE: Burrito will cut better if it is cold. - Lay flat on baking sheet
- Spoon salsa over top
- Put cheese on top
- Bake at 350º for about 12-15 minutes
Serve with a side of fruit
You will note that sauce was not used on the medallions in the photo. It was OK, but was a bit dry. Some sort of sauce would keep it nice and moist.
