Canadian Bacon
Made with pork loin
Preheat dry skillet put in garlic, felled seeds, star anise, black peppercorns, thyme, bay leaf
Add to pot of hot water
Add fennel stalks
Whisk in salt, sugar and punk curing salt
Add ice water after dissolved

Use an injector
Pour over pork loin
Brine in fridge 5 days
Turn pork 2x daily
Smoke for 4 hours or until 160°
