Mac and Cheese – COLLECTION

  • Many of the professional recipes have you starting out with a roux. This is one of the recipes that Grandma contributed to the website. See optional roux note if you want to experiment.

Mother Sauces

  • BECHEMEL
    Take ¼ C each flour and butter, and heat until it starts to brown
    Whisk in 2 C of whole (hot) milk gradually – ¼ C at a time
    Stir to completely incorporate before adding more milk
  • MOURNAISE
    Add shredded cheese to your Bechemel
    ½ C cheddar and ½ C Gruyere

For basic Mac and Cheese mix cooked pasta in with your Mournaise

When ready to serve, top with Panko and bake at 350º for about 20 minutes

Grandpa’s Mac and Cheese

{CAPTION}Ingredients

  • 4 C dried macaroni pasta (large)
  • 2 eggs
  • 1/2 stick butter (4 TBL)
  • 1/4 C AP flour
  • 2 C whole milk
  • 1/4 C Dijon mustard
  • 1 LB fresh sharp cheddar
  • 1/2 tsp salt – 1/2 tsp pepper
  • 1/4 C black olives (rough chop)
  • 1/2 onion (diced)

Step by Step

  1. Preheat oven to 350º
  2. Cook the macaroni most of the way (al dente)
  3. Drain and set aside
  4. In a small bowl, beat the eggs and set aside
  5. Rough chop the olives and put into large mixing bowl
  6. Grate cheese and add to the olives
  7. Add salt and pepper into the mixing bowl
  8. Measure milk, mustard and onion and set aside
  9. Put butter and flour into the bottom of a heavy stock pot
  10. Cook over medium-low heat until flour barely starts to brown
  11. Add the onion into the stock pot
  12. Mix in the milk and the mustard
  13. Cook until it starts to thicken (5-7 minutes)
  14. Reduce heat to low
  15. Temper the hot sauce into the egg mixture – slowly – whisking constantly
  16. After 1/4 has been added to the eggs, whisk it back into the stock pot
  17. Add in the cheese and olives and stir until mixed
  18. Add the drained macaroni and mix well
  19. Serve immediately

Mushroom Mac and Cheese

INGREDIENTS

  • 1 can Cream of Mushroom soup
  • 1 tsp cumin
  • 1 C Shredded SHARP cheddar
  • 1 C Shredded Swiss cheese
  • 1/2 stalk de veined and chopped celery
  • 1/2 tsp allspice
  • Elbow macaroni
  • Sprinkle with fried onions and bake 375° about 30 minutes

  1. Cook macaroni

Basic Mac and Cheese

macINGREDIENTS

  • 4 C uncooked large elbow macaroni
  • Optional: 1 C uncooked cauliflower pieces
  • 2 C Panko bread crumbs
  • 8 TBL butter
  • 6 TBL All-Purpose Flour
  • 2 tsp Dried Mustard
  • 2 tsp Spicy Paprika
  • 1 tsp salt
  • 1 or 2 dashes Tabasco
  • 5 CU 1/2 and 1/2 (or whole milk)
  • 1 C Philly Cream Cheese
  • 2 C Colby Cheese (grated)
  • 2 C Monterey Jack Cheese (grated)

STEP BY STEP

  1. Cook pasta al-dente (about 8 minutes for thin pasta, longer for thicker pasta)
    Put cauliflower in half way through – about 4 minutes
  2. Toss 2 TBL melted butter with bread crumbs. Mix well. Set aside
  3. Drain pasta and melt 5 TBL butter in emptied pot. Melt till foam subsides.
  4. Whisk in all-Purpose flour. Cook till a tawny color.
  5. Add Worcestershire, Paprika, dried mustard, salt and Tabasco
  6. Add milk and bring slowly to a boil stirring constantly.
  7. Add cream cheese
  8. Reduce heat and cook 3-5 minutes or until thickened.
  9. Stir 3/4 of the cheese into the pasta
  10. Mix with cream cheese mixture
  11. Transfer to baking dish and top with bread crumbs mixed with the remaining cheese.
  12. Bake for 15-20 minutes @ 350 degrees
  13. Broil 2 more minutes while still on the middle rack.
  14. Let set 5 minutes before cutting / serving

VARIATIONS

  • Ten Cheese Mac and Cheese
    • 2 C Italian Blend Shredded Cheese: Provalone, Mozzarella, Parmesan, Romano, Assayago
    • 2 C Mexican Blend Shredded Cheese: Colby, Monterey Jack, Chedder, Manchego
    • 1C Whipped Cream Cheese (used later)
  • Create roux with butter, flour, onion, Worcestershire, paprika
  • Put chopped scallions in the mix
  • Add 4 C Half and half
  • Cook pasta, toss with 3/4 of the shredded cheese
  • Put mixed pasta, scallions and cheese into baking dish
  • Pour cream cheese over top
  • Topping 2 C cheese blends, french fried onions
  • 25 minutes @ 350º

Macaroni and Cheese by Lydia’s Italy

Mix together one cup each grated cheddar cheese and grated fontina cheese
Pour enough milk in to see the visible milk line through the cheese . Kind of like you would do if you were making a quiche
And several leaves of sage and one Bay leaf
Set aside for one hour
Put in stove-top / oven-safe casserole dish at low heat
start cooking in salted water big elbow macaroni or rigatoni noodles . Cook only al dentė

Topping
Coarsely great part of a French loaf
Melt butter in the pan
And bread crumbs to toast
Set aside to cool

Using slotted spoon or spider strainer to bring pasta into cheese mixture. Don’t worry about completely straining because you want some of the pasta water mixed in.
Cook together for a few moments stirring occasionally

Toss grated Parmesan in with the breadcrumbs

In greased baking dish, sprinkle some breadcrumb mixture in the bottom.
Spoon noodle mixture onto breadcrumbs as the next layer removing leaves
Top pasta with more breadcrumbs
Bake at 425° uncovered about 25 minutes


Stovetop Mac and Cheese – ATK

  • 1.5 C water
  • 1 C milk
  • Bring water and milk to a low boil, then reduce heat
  • Add 8 oz (weighed) elbow macaroni
  • Simmer 6-8 minutes
  • Add 1 C Deluxe American Cheese – bulk grated, not prewrapped
  • Take off heat
  • Stir in 1 C shredded Extra Sharp Cheddar
  • Add 1/2 tsp Dijon mustard and cayenne pepper to taste
  • Cover and let meld – serve hot

Mac and Cheese – ATK

  • 1 lb pasta
  • 3 tbl butter
  • stale bread
  • 1/2 tbl dried mustard
  • 1 tsp salt
  • ¼ tsp cayenne
  • 5 cu milk
  • ½ lb sharp chedder
  • ½ lb Monterey Jack
  1. Cook pasta in plenty of water to al dente. Make bread crumbs with stale bread strips, put in blender w/3 tbl butter, pulse to 1/8” pieces (set aside). Drain pasta. In pot add 5 tbl butter and melt till foam subsides, whisk in 6 tbl flour, cook until tawny color, add ½ tbl dried mustard, 1 tsp salt, ¼ tsp cayenne and 5 cu milk. Bring to boil, reduce heat and cook 3-5 min till thickened. Stir into sauce, ½ lb sharp chedder, ½ lb Monterey jack, toss in pasta and cook for 6 min. Transfer to baking dish, top w/bread crumbs. Broil 2 minutes on middle rack.
  2. Let set 5 min, then serve.

Mac and Cheese – Composite

1 CU uncooked pasta (or 2 CU cooked)
1 CU Milk
1 CU diced French bread
Onion (diced)
¼ tsp cayenne
1/2 tsp Mustard
1 TBL SALTED Butter
2 TBL flour
Bread crumbs
1/4 CU each Cheeses (Sharp Cheddar, Mozzerella or Monterey Jack, Parmesean)

Instructions

1. Cook pasta in plenty of water to al dente.
2. Make bread crumbs with French bread,
put in blender w/ 3 tbl butter, pulse to 1/8” pieces (set aside).
3. Drain pasta. In pot add 2 TBL butter and melt till foam subsides,
add grated onion and cook until it starts to turn translucent
whisk in 2TBL flour, cook until tawny color, add ½ tsp dried mustard, scant salt, ¼ tsp cayenne and 1 cu milk.
4. Bring to boil, reduce heat and cook 3-5 min till thickened.
5. Stir into sauce – grated cheeses,
toss in pasta and cook for 6 min.
6. Transfer to baking dish, top w/ bread crumbs.
7. Bake 10 minutes at 425 degrees or until the cheese/bread starts to brown

Let set 5 min, then serve.

Green Tomatoes – COLLECTION INDEX

Notes:

  • Use Green Tomato Pie to create Green Tomato Tartlets using Puff Pastry
  • Green tomatoes WILL eventually ripen.  They will not have the full flavor of a vine-ripened tomato, but will be just as good as supermarker ‘maters.  This can take anywhere from one to five weeks.  You can speed up the ripening process by putting them in a paper bag with a banana.  The ethylene gas (a natural growth hormone) from the banana will speed the tomato ripening process.
  • Shop locally and seasonally.  Buy firm but not mushy.  Don’t refrigerate or it will kill the flavor.

 

Ghee – aka – Clarified Butter

  1. Heat butter in a sauce pan at medium low heat.  DO NOT STIR.
  2. Once it has completely melted, let rest a few minutes
    – During this time the solids will precipitate to the bottom of the liquid
  3. Skim off any foam that has formed on top.
  4. You now have clarified butter
  5. Keep cooking until the solids in the bottom begin to turn brown
  6. You now have ghee
  7. Carefully pour off the ghee, leaving the solids behind.
  8. Ideally, pour it through cheesecloth for even cleaner ghee

This will give a cleaner taste to whatever you are cooking.  It is also less likely to burn.  Just a dash of EVOO will also help inhibit burning.  If you are a purist, pour the butter through cheesecloth.

Tips: Non-Stick Skillets

This includes teflon, ceramic, and all surfaces that claim to be non-stick.

Teflon Tips

Teflon, Ceramic and other non-stick finishes need to be taken care of.  Here are some tips that you may find useful.

  1. Wash and rub a little canola oil into it before first use.
  2. Don’t heat the pan empty.  At least put a little oil into the pan.
  3. Don’t use cooking spray.  There is a propellant that will build up and destroy your pan.  If you must, get a spritzer bottle and put canola into it.
  4. Don’t let the temperature EVER exceed 450.  Ideally, I never even exceed 400º  This Thermapen is one of the best investments you could make.  You will use it nearly every single day.
  5. Don’t let food dry on the surface of your pan.  When the temperature has dropped to 250º (or below) wipe it off with a wash cloth and hot water.  I usually don’t even like to use soap on mine.
  6. If you can’t clean it immediately, at least fill it with water to minimize the chemical effects of the remaining cooking oil residue.
  7. If you do use soap on your pan, occasionally wipe in a little canola oil  (See Tip #1)
  8. Never ever EVER use abrasive cleansers or pads on your pan.
  9. Never put your teflon or ceramics into the dishwasher.  The hot water is OK, but the drying cycle will kill your pan.
  10. For stubborn stains, use a mixture of baking soda and water.  mix and apply the paste.  Leave for an hour, then wipe off.  Repeat if needed.
  11. If your pan has a wooden handle, season it VERY occasionally by wiping with canola oil
  12. Season a hot pan (250º) occasionally with a paper towel and olive oil (See Tip #1)
  13. Never use metal cookware (spatula, whisk, spoon, etc) when cooking with your non-stick pan

THE PENNY TRICK – If you are boiling water, put a penny in the bottom of your pan.  If it boils dry (which will ruin your pan) the penny will start to rattle because of the boiling water beneath the penny.  The rattling will tell you your pan is nearly empty (usually) before your pot is destroyed.

Party Sub

If you want to be a hit at your next party or potluck, consider making a six foot sub.  HINT:  It is not really six foot long, it just looks that way.

  • 6-8 sub sandwich rolls
  • about 24 slices of provalone cheese
  • 24 slices of ham
  • 30 slices of salami
  • 1 onion – sliced very thin
  • 2 bell peppers – cut into very thin strips
  • 1 head of iceberg lettuce – shredded
  • 4 tomatoes – sliced thin
  • EVOO
  • Optional – Dijon mustard or ketchup

STEP BY STEP

  1. Here is the key:  Cut the tips off all of your sub rolls.  They will eventually fit together (end to end) so that they look like one huge sub (see below).
  2. Cut them lengthwise into sandwich buns
  3. Put thin layer of onions on the subs
  4. Spread lettuce onto the subs
  5. Put tomato and bell peppers on the lettuce
  6. Add your meats, and end with your cheese
  7. Optional – Put on a baking tray and place under the broiler for about 30 seconds to melt the cheese
  8. Set them up on a large tray (as shown to the right) and cover with a towelsub

Candied Nuts

Use almonds, pecans, peanuts, or walnuts – or all of them

INGREDIENTS

  • 3 oz Karo syrup
  • 1/2 tsp almond or walnut extract
  • 1 C granulated sugar

STEP BY STEP

  1. Heat over medium high heat
    This will take about 30-40 minutes
  2. When it starts to brown and caramelize, add your nuts
  3. Dump 3 C nuts into the glaze
  4. Stir until everything is well coated
    You should have “spider web” strings between the pieces
    About 5-10 minutes
  5. OPTIONS:  Add some coarse salt for salted caramel, chili for a bit of a bit, or cinnamon for a holiday treat.
  6. Pour onto waxed paper or parchment paper and let them COMPLETELY cool before breaking apart
  7. They will keep for a very long time – – – months !

NOTE:  This will pretty much ruin your wooden spoon, so either use the same spoon every time, or use something that is near the end of its life anyway.

Cast Iron Pizza

Get a large ball of pizza dough from your favorite pizza place.  About $5.  Yes Grandpa takes shortcuts some of the time.

  • 3 TBL butter
  • 1/2 C onion
  • Fontina cheese
  • Mozzarella cheese
  • Marinara pizza sauce
  • 2-3 types of mushrooms
  1. Roll pizza dough into COLD cast iron pan.
  2. Make sure dough is kind of up on the side of the cast iron skillet to hold ingredients in.
  3. Idea:  Cut thin logs of mozzarella and roll up into the crust for dipping.
  4. Lay mozzarella cheese as first ingredient
  5. Add onion and mushrooms
  6. Tops with a few spots of marinara (not too much)
  7. Put some tabs of butter and fontina cheese on top
  8. Optional:  Pepperoni or sausage
  9. Bake at 550º for 14-16 minutes.

Why Substitute?

  • Emergency:  If you don’t have a needed ingredient, there are usually options.
  • Health Related:  Eliminating peanuts, for example :: Most allergies are with milk, egg, peanuts,  shellfish, soy, wheat
  • Creative:  Tarragon rather than oregano, for example

Allspice

1 teaspoon = 1/2 teaspoon cinnamon + 1/2 teaspoon ground cloves

Apple Pie Spice

1 teaspoon = 1/2 teaspoon cinnamon + 1/4 teaspoon nutmeg + 1/8 teaspoon cardamom

Baking Powder

•  Single Acting:  1 teaspoon = 1/4 teaspoon baking soda + 5/8 teaspoon cream of tartar – 1/2 tsp of cornstarch if you are not using it right away
Confectioner sugar ?!?
•  Double Acting:  Releases gas twice – Hard to do in the home

Baking Soda

There is NO substitute for baking soda

Basil

Substitute peas

Bread Wheat Flour

Xanthan Gum – Helps do the task that gluten does

Other gluten-free wheat flour substitutes are garbanzo beans, teff, sorghum and quinoa flours

Butter

•  Replace half the amount of butter in your recipe with applesauce; if the recipe calls for one cup of butter, use half a cup of butter and half a cup of applesauce. If you don’t mind a denser, more moist bread, replace all the butter with applesauce to cut even more calories and fat.
•  Use Greek yogurt cup for cup to replace all or part of your butter
•  Canola oil can be used in place of melted butter.

Buttermilk

1 cup = 1 tablespoon lemon juice or vinegar plus enough regular milk to make 1 cup (allow to stand 5 minutes in the fridge)

Chili Sauce

1 cup = 1 cup tomato sauce, 1/4 cup brown sugar, 2 tablespoons vinegar, 1/4 teaspoon cinnamon, dash of ground cloves and dash of allspice

Chocolate, Unsweetened

1 ounce = 3 tablespoons cocoa plus 1 tablespoon butter or regular margarine or vegetable oil

Cornstarch (for thickening)

1 tablespoon = 2 tablespoons flour
You must cook longer than you would with cornstarch.

Cream

•  1 C = 1/3 cup melted unsalted butter + 3/4 cup milk.
•  1 C = 1/3 cup melted unsalted butter + 3/4 cup low-fat milk + 1 TBL flour or cornstarch.
•  1 C = 1 cup skim milk + 2 TBL cornstarch.
•  1 C = 1/6 cup melted butter + 7/8 cup half-and-half.

Egg:  1 whole egg

•  1 egg = 1/4 cup egg substitute
•  3 TBL powdered flax

Mayonnaise

1/2 C = One egg yolk to 1/2 cup of oil. Plus 1 tsp Dijon and salt

Miso

Soybean allergy: 

Parmesan – from Italy

Substitute American Parmesan if mixed

Peanut Butter

Substitute cashew butter,

Sugar, Confectioners’ or Powdered

1 cup = 1 cup granulated sugar plus 1 tablespoon cornstarch; process in a food processor using the metal blade attachment until it’s well blended and powdery.

1 cup = 1/2 cup tomato sauce plus 1/2 cup water

Wine, Red

Any amount = The same amount of grape juice or cranberry juice

Wine, White

Any amount = The same amount of apple juice or white grape juice

Pork Chops – COLLECTION

Pork Chop Notes

  1. All Pork Chops are taken from the loin – or the back
    1. Shoulder chop is closest to the head
      Lots of muscles and connective tissue
      Good for braising and slow cooking, but not for pan frying
    2. The rib chop is next – This is the front part of the center cut
      Cut these thick and cook with fast dry heat – like a BBQ grill
      Good for stuffing since it is an entire muscle
    3. The tenderloin and loin chop – This is the back of the center cut
      The pork equivalent of the T-bone and Porterhouse
      The loin and tenderloin cook at different rates
      Wrap the tenderloin with foil for the first half of the cooking process
    4. The sirloin chop is near the back of the hog
      Most amount of muscles and connective tissue
      Good for braising and slow cooking, but not for pan frying
  2. Bone-in means more flavor.  Unless you have a specific reason, always use bone-in pork chops.
  3. Frenching the pork chop means to scrape the meat off the bone to create a “handle.”
  4. Consider a two-day brine otherwise it will taste dry – Bring 2 C apple cider to about 185º :: and add 1 C brown sugar, 1 C salt, 8 cloves, bay leaf, 1 tsp corriander and 1 TBL peppercorns, 1 TBL dry mustard.  Add 1.5 C ice after all solids are dissolved. Let cool, then marinate 24-48 hours in the fridge.  This will really enhance the flavor of your pork chops.

Beginner Pork Chops

Novice Pork Chop

  1. Season 2 bone-in pork chops with salt and pepper
  2. Heat 2 TBL EVOO in a hot cast iron skillet
  3. Sear pork chops till brown
  4. Flip chops, then cook 1 minutes more
  5. Set pork chops aside on a plate
  6. Add minced garlic, onion, tomatoes, kalamata olives, capers and one chopped anchovy to the hot skillet.
  7. When softened, add pork chops back into the pan.
  8. Cook at 450º for 5 minutes

Fancy Pork Chop

INGREDIENTS

  • 2 (bone-in) pork chops, 1 inch thick (with pockets for stuffing)
  • BRINE – Let soak in brine overnight
    • 1/2 C orange juice
    • 1 TBL Worcestershire
    • 1/4 C white vinegar
    • 2 TBL sugar or Karo syrup
  • STUFFING
    • 1 TBL butter
    • 2 TBL onion, finely chopped
    • 1 apple, finely chopped
    • 2 TBL water
    • 1 tsp celery – finely chopped
    • 1/2 tsp salt
    • 1/4 tsp pepper
  • DREDGE INGREDIENTS
    • 2 eggs – beaten
    • 1/2 C flour
    • 1/2 C bread crumbs

STEP BY STEP

  1. Mix brine in a baggie.  Marinate pork chop overnight, or at least 6 hours.
    PREPARE YOUR MEAT
  2. When you are ready to cook, drain baggie and pat pork chop dry
  3. Put pork chops in freezer to firm up
  4. Heat oven to 350 degrees.
    CREATE YOUR STUFFING
  5. Place butter in saucepan and saute onions in large skillet
  6. Add apple and celery and saute 1 minute
  7. Add all remaining stuffing ingredients to skillet
    STUFFING YOUR PORK CHOP
  8. Remove pork chops from freezer and cut a pocket in them
  9. Fill pork chops with prepared stuffing.
  10. Fasten edges with wooden picks.
    COAT YOUR PORK CHOP
  11. Dip pork chop in egg, then flour, then again in egg, then in bread crumbs
  12. Place stuffed chops flat side down in single layer on top of a draining rack in a shallow baking pan
  13. Cover pan tightly with foil.
  14. Bake in moderate oven at 350 degrees about 1 hour.
  15. Uncover and continue baking another 30 minutes

VARIATIONS

  • Serve with cinnamon apple wedges or hot spiced applesauce

Braised Pork Chop

You can also use this recipe with ribs.

INGREDIENTS

  • 4 pork loin or rib chops, about 1/2 inch thick
  • 1 teaspoon salt
  • 1/4 tsp. pepper
  • 1/4 cup pineapple juice, apple juice or water (Try a can of pineapple slices)

STEP BY STEP

  1. Cook pork chops over medium heat until brown: drain. Sprinkle with salt and pepper. Reduce heat; pour juice on pork. Cover and simmer untildone, 20 to 25 minutes.
  2. My special touch with this recipe is to place pineapple slices on the chops and leave them while they simmer. I also salt and pepper to taste.
  3. This recipe comes from a 30 year old Betty Crocker cookbook, so there’s no calorie information.

Use Grandpa's Thunder Powder or Arghhh Powder for a dry rub, and coat liberally.

Stuffed Pork Chops

Pork Chops
Figs
Sugar
Sal/pepper
Rosemary
1 tblOil
1 Shallots
1 clove garlic
1 tsp Dijon
¾ cu beef stock
½ cu red wine
t tbl corn starch
1 tblbutter
chives
mustard seed

Step by Step

  1. Halve figs, cut off ends, puree in chopper
  2. Add scant sugar, salt/pepper, 1 tsp rosemary (some liquid).
  3. With boning knife stick into middle to create pocket as small as possible. 
  4. Use pastry bag inject stuffing.
  5. Sear in hot oil 7-8 minutes, toast mustard seed in pan.

Rosemary Sauce
1 tbl oiol, 1 shallot, 1 clove garlic, ¾ beef stock, ½ cu red wine, 1 tsp Dijon, salt/pepper. Reduce/whisk, add 1 tbl cornstarch to thicken, 1 tbl butter.

Top w/ chives, rosemary, mustard seed

Pork Chop with Mushroom Stuffing

Ingredients

2 tsp olive oil
2 TBS green onions
4 oz mushrooms (coarsely chopped)
2 tsp fresh rosemary or oregano
pinch of salt & black pepper
2 TBS Worcestershire sauce
2 pork chops WITHOUT marbeling

Instructions

1. Saute green onions
2. Add mushrooms and spices – cook 3-5 minutes
3. Make a pocket in each pork chop – Cut into, but not through
4. Spoon stuffing mixture into pork chop
5. Secure with wooden toothpicks
6. Grill as usual
7. Remove toothpicks before serving

Variations: Use brown crimini mushrooms for better mushroom flavor

Grandpa’s Stovetop Pork Chop

This is great for when you are on vacation and only have a skillet.

Ingredients

2 pork chops, 1 inch thick
1 Granny Smith apple (peeled, cored, diced)
1/2 small onion (sliced very thin)
1 tsp grated ginger
a few shakes allspice
a few shakes cayenne
1 CU appled cider
3 TBL brown sugar
1/8 tsp. Pepper

Instructions

1. Brine the pork chops (soak in salt water 1 hour)
2. Heat oil in dutch oven to smoke point
3. Put pork chop in and cover – cook 3 minutes
4. Flip pork chop – cook 3 more minutes
5. Remove pork chop from pan, cover with foil, set aside – let rest

– PREPARE SAUCE
6. Put onions into hot pan for two minutes
7. Add diced apple pieces – cook five minutes
8. Add all dry spices – cook three minutes
9. Add apple cider – cook until reduced and slightly thickened (about 5 minutes)
10. Dump any pork chop drippings back into pan and mix

Variations Serve with steamed asparagus

Notes Serve with cinnamon apple wedges or hot spiced applesauce

Grandpa’s Hard Boiled Eggs

Consistent Results

Summary: Start cold, Bring to boil, Finish in 15.

      1. DO NOT USE FRESH EGGS.  Eggs should be at least near (or past) their last day of sale.  This is not an expiry date.  They plan on eggs being in your fridge for a couple of weeks after his date.
        • The time allows the shell to separate from the membrane making them much easier to peel.
      2. Put a dozen eggs (room temperature) into a deep pot, and add cold tap water until covering the eggs with an extra 2-3 inches of water
      3. Add 2 TBL salt and 1/4 cup white vinegar to water and stir until salt is dissolved.
      4. Turn burner on highest heat possible.  Watch closely to make sure it does not come up to a rolling (or roiling) boil.  If you have an immersible thermometer, you are looking for about 205º
      5. Meanwhile, prepare bowl of water containing about four cups of ice cubes, for when eggs are done. Set aside.
      6. When water starts to steam or lightly boil, turn heat to low and start timing
      7. Cover and let cook for 10 minutes
      8. (optional) Every 2 minutes or so, use a tongs to gently stir and rotate egg (to center yolk)
      9. At the eight minute mark, put water into your bowl of ice
      10. At 10 minute mark, use a slotted spoon to carefully transfer eggs from the hot water into the ice water.
      11. Let cool for 15 minutes.
      12. Eggs are done.
      13. Drain, dry and refrigerate.

Peeling Tips

  1. Start peeling from the fat end – the air sac usually makes this end float
  2. If you peel within 24 hours, they will peel more easily.  Any longer than that and the moisture evaporates through the shell, and makes them harder to peel.
  3. Use eggs that are several days past their “Sell by” date.  These are older eggs, and the membrane has begun to let go.  They will peel more easily.

THE STEAM METHOD

Another method that produces consistent results because the temperature is highly regulated is to put 1-2 inches of water in a steamer.  Put the eggs into the basket, but don’t put the basket on the steamer yet.  Bring the water up to a boil, and THEN put the basket back on the steamer and cover. 

Eggs should be room temperature.

For large eggs, time 13 minutes exactly, then remove the eggs to a bowl of iced tap water to cool – about 30 seconds.  12 minutes will give you a softer white and creamy yolk.  15 minutes will give you a drier yolk and very firm white.  Peel underwater.

  • Create a lid with puff pastry – Dock the crust – Alternate, cut moons or shapes
  • Bake before filling at 350º for 5 minutes

Basic Chicken Pot Pie

This recipe is much like the one shown below. You may use my ingredients, but be sure to watch the video for some important tips.

  • 4 TBL butter
  • 1/4 C AP flour
  • 1-1/2 C chicken broth
    (or 1 can Campbells Cream of Potato Soup instead of above three ingredients)
    IN A SEPARATE MIXING BOWL, COMBINE
  • 1 small carrot – diced small
  • 1/2 C baby peas
  • 1 small stalk celery – diced small
    (or 1 C mixed veggies instead of above three ingredients – Skip to Step 7)
  • 1 C shredded chicken
  • 1/2 C shredded cheese
  • 4-6 black olives – diced – Optional

Ingredients – Crust

  • 1 C AP flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/4 C shortening
  • 3 TBL cold butter
  • 2 TBL granulated sugar
  • 1/4 C ice water
    (or prepared pie crust from the grocery store)

You will also need one egg yolk and one egg white (separated) in two separate bowls.
A pastry brush will be helpful, but you can use your fingers at the pastry brush step.

  1. Bring sauce pan up to medium heat
    FILLING – – – –
  2. Add butter to hot pan
  3. As soon as butter is melted, add flour
  4. As soon as flour starts to ball, add half your broth
  5. Stir until it starts to turn smooth
  6. Add the rest of your broth
  7. Stir until it starts to thicken
  8. When it has thickened (per video below) add it to the mixing bowl with your chopped veggies
    CRUST
  9. Pulse flour, salt, baking powder, shortening and butter in a food processor till combined
  10. Add 1/4 C ice water all at once and pulse until a ball forms
  11. Dump onto the counter to finish kneading
  12. Separate into 4 pieces and let rest five minutes
  13. Meanwhile, spoon your filling into ramekins for cooking
  14. Roll out your crust to a near circle.  If necessary, cut slightly bigger than diameter across top of ramekin.
    NOTE: My cutter was the exact size of my ramekin top, so I cut it, then rolled it more to make it slightly larger
  15. Brush the bottom with egg white and press into your pot pie filling, pressing around the edge
  16. Brush the top with egg yolk
  17. Poke holes in the top so that steam can escape, otherwise your pie crust will fail.
  18. Bake at 350º for 35 minutes until browned
  19. Let rest five minutes before serving, or cool on counter and refrigerate for reheating later.

 



Scratch Chicken Pot Pie

1 C chopped onion (1/4 inch pieces)

1 C chopped celery (1/4 inch pieces)
1 C chopped carrot (1/4 inch pieces)
1/2 C melted butter
1 C frozen tiny English peas (canned peas, in a pinch)
1/4 C AP flour
2 C chicken broth
1 C whole milk
1 tsp salt
1/4 tsp pepper
4 C diced cooked chicken
2 pkg. frozen puff pastry, thawed
1 egg yolk
1 TBL whole milk

1. Saute onion, celery and carrot in butter for 10 minutes.
2. Stir in peas and flour, cook 1 minute, stirring constantly.
3. Gradually add broth and 1 cup whole milk; cook over medium heat, stirring constantly, until thick and bubbly.
4. Stir in salt and pepper.
5. Add chicken, stirring well.
6. Ladle chicken mixture into cooking ramikins – just to the top
7. Set aside.
8. Roll pastry sheets to 1/8 inch thickness.
9. Cut pastry 1/2 inch larger than bowl(s).
10. Combine egg yolk and 1 tablespoon milk.
11. Brush one side of pastry. Place brushed side down over bowl(s), folding edges under and pressing firmly to sides of bowl.
12. Brush top with remaining egg mixture.
13. Bake at 350 degrees for 35 minutes until top is puffed and browned.



Chicken Pot Pie – From a whole chicken

Piece an entire chicken.
Use dark meat (legs and thighs) or light meat (breast and back)
Place into stock pot with cut up carrots, celery, onion and garlic
Pour one can of chicken stock into pot, then add water until it covers the chicken
Bring up to simmer over medium high heat
When it starts to simmer, reduce heat to medium low and simmer for 30 minutes
Strain out solids, retaining liquid
Set both aside to cool

To prepare dough:
(Bisquick or Puff Pastry is also acceptable)
Add to a food processor:
– 1 1/2 C flour
– pinch of salt
– 1 stick of cold butter – cubed
– 8 ounces of cold cream cheese – pieces
Pulse together until it forms crumbs
– Add 1 egg yolk
– Drizzle in water until it STARTS to come together
Remove from food processor and finish on a floured surface (the counter)
Wrap in plastic wrap and refrigerate for an hour to 24 hours

To prepare vegetables:
Cut butternut or acorn squash into 1/2 inch cubes
Cut 1/4 onion into pieces
Cut 1/2 stalk celery into 1/4 inch pieces
Cut carrots into 1/4 inch pieces
Toss in EVOO and salt and bake on baking sheet for 30 minutes at 350 degrees

Cut string beans into 1/2 inch pieces
Add a small can of peas (or fresh if you desire)

To finish up:
Set dough on counter to start to come up to room temperature
Shred or cube chicken
Make a roux (see recipe here) with the leftover strained chicken stock – be sure to stir constantly
Mix chicken, fresh veggies and cooked veggies together
Roux should be thickened, but not pasty or lumpy
– If necessary, thin by whisking in 1/2 C chicken stock

Flatten dough to about 1/4 inch
Fill ramekin with veggie mixture
Label roux over top of veggies about 1/2 to 3/4 of the way up
Top with dough, brush with melted butter and trim edges
Poke holes (or a smiley face) into top of crust to let steam vent
Bake at 350 degrees for about 35 minutes

Easy Chicken Pot Pie

1 can cream of chicken soup
1 PKG (about 8 OZ) frozen vegetables
1 CU cubed or shredded cooked chicken or turkey
1/2 CU milk (or less)
1 egg
1 CU Bisquick
1 prepared pie plate

Instructions
1. Mix soup, vegetables and chicken in bowl, then pour into 9″ pie plate
2. Mix milk, egg and Bisquick (very thick) and spread over chicken mixture
3. Bake @ 400 degrees for 30 minutes or until golden

Hot Crab Dip

  • 1 can crab meat, or 1/2 LB Krab
  • 1 8 oz package of cream cheese
  • 1 tsp whole milk
  • 1/2 C mayonnaise
  • 1 TBL minced onion
  • zest and juice from one lemon
  • dash of Tabasco
  • 1 TBL parsley
  • 1/2 tsp paprika
  • 2 TBL slivered almonds
  1. Mix all but Krab and almonds together
  2. Drain and flake Krab
  3. Fold gently into the mixture
  4. Put in a small casserole dish
  5. sprinkle with slivered almonds
  6. Bake at 350º for 20 minutes
  7. Serve with crackers

 

Crown Roast

This recipe is not that hard, and it looks as if you’ve gone all out.
Buy TWO center cut pork roasts – about $3 per pound
Cut straight across the top of the bones and clean them. Use the meat for something else, don’t throw it away.
Lay down cleaned ribs side by side
Using a sharp knife, poke holes in between each rib
Use a potato peeler to thread a long piece of butcher twine in and out and in and out
Tie them together making a circle with the cleaned bones pointing up. Roll into a “bell” and tie the twine securely Tie the top bones together too, just to be safe

Season well with Grandpa's Thunder Powder or Arghhh Powder

IF YOU DON’T WANT TO DO ALL OF THIS, MANY BUTCHERS WILL FRENCH CUT IT FOR YOU. SOME WILL EVEN TIE IT UP FOR YOU.

Fill the cavity with stuffing
Cover it all loosely with foil
Bake 3 hours at 350º
At the 2 hour and 15 minute point, remove the foil
Allow to rest for 20 minutes before cutting or removing the twine.


Spring Rolls – COLLECTION

I created this base recipe during a vacation where we are currently traveling Europe and are living in Istanbul, Turkey.  You might guess that pork is difficult to come by in a Muslim country,  so I created a more vegetarian option.

Saying SPRING ROLL is kind of like saying CASSEROLE.  There are many ways to make great spring rolls.  Here are many options from which you may choose.  The only commonality is that you use Rice Paper Sheets (round) available from most grocery stores.  Soak them in cold water for about 20 seconds to soften them up before trying to roll them.

Be sure to review THINGS YOU NEED TO KNOW before you start on your Spring Rolls.

Consider threading the shrimp on a skewer prior to cooking.  It will cook straight – and then stay straight.  it will fit inside your spring roll very nicely.  Cook only 3-5 minutes (depending on the size) and then plunge in ice water.

Octopus can be eaten raw or precooked.  Slice on the bias.  Slice larger, tough octopus very thinly.

 

INGREDIENTS – Use whichever you prefer

      • Cilantro
      • Mint
      • Basil
      • Shredded carrots
      • Lettuce
      • Red or Green peppers
      • Red onion – thinly cut julienne strips
      • Thinly cut Napa cabbage or Spring Greens
      • Vermicelli Noodles
      • Soy sauce
      • Shredded pork or chicken (optional)
      • Shrimp are commonly used too
      • Chives – cut to about 5 inches in length

      1. Dice, shred, chop, and toss all ingredients except chives
      2. Soften rice paper in barely warm water by soaking for about 5-10 seconds
      3. Lay rice paper on a damp paper towel – even better is to use a high-thread count linen napkin or culinary towel.
      4. Place chives so they are visible through the rice paper
      5. Spoon ingredients along rice paper
      6. Fold and roll as tightly as possible – serve with dipping sauce

You can alternatively use won ton wrappers and bake or fry your spring rolls.

Serve with ginger peanut dipping sauce.  You can also just use Hoisin sauce, which is available in most oriental grocery stores.

Dipping Sauce:

  • Peanut butter
  • Rice Wine Vinegar
  • Soy
  • Hoisin or Plum Sauce
  • Chili Sauce

 

INGREDIENTS

      • 1 LB nice thick tuna steak – very fresh
      • 8 mint leaves
      • 1/3 C Hoisin sauce
      • 1 tsp rice wine vinegar
      • 2 TBL EVOO
      • 2 fresh limes
      • 1 tsp soy sauce
      • 1/2 tsp Wasabi
      • 1 fresh avocado
      • 2 C grated carrots or julienne strips
      • 1 C bean sprouts
      • 1/2 C chopped cilantro
      • 1/2 C chopped green onion / chives
      • 1/4 C slivered red onion
      • About 16 Rice paper wrappers
      • Toasted sesame seeds

STEP BY STEP

      1. Get your grill pan smoking hot… about 400º
      2. Lightly oil surface of tuna and season with salt and pepper
      3. Sear on high for 2 minutes on each side, then remove from heat
        Inside layer should still have some pink in it
      4. Remove from hot pan, and set aside on a plate
      5. Mix sauce containing Hoisin, vinegar, EVOO, limes, soy and Wasabi
      6. In separate bowl, mix together carrots, sprouts, cilantro, chives and red onion
      7. Slice avocado into thin slices and toss gently in the vinaigrette
        This will keep avocado from browning
      8. Slice your tuna into very thin strips so that you can see the cooked and raw layers
      9. Drain most of the vinaigrette from the avocado bowl into the bowl with your fish, and toss to coat
        This will keep your fish looking fresh
        Keep avocado in the emptied vinaigrette bowl for use later
      10. Heat 1 C of water into a shallow glass dish
      11. Dip a rice paper wrapper into the hot water for about 3-5 seconds
      12. Lay it down an sprinkle the paper lightly with sesame seeds
      13. Lay a thin strip of tuna so it can be seen through the rice paper
      14. Lay a thin strip of avocado so it can also be seen
      15. Position several mint leaves so that they can also be seen
      16. Lay a thin amount of your other toppings on top of the avocado, tuna and lettuce
      17. Fold in the side points
      18. Fold in one of the other points and roll to make a nice tight spring roll
      19. Refrigerate for up to six hours
      20. Serve with Peanut Dipping Sauce

Crab Spring Rolls

Your filling can be shredded chicken, crab, or even just vegetables. For this recipe I will be using canned crab

      1. Start with 1 can of fresh shredded crab and break apart in a mixing bowl
      2. 1 TBL mayo
      3. 1 tamarind paste cube (1 TBL) Soaked in 2 TBL boiling hot water
      4. 1 Thai chili – minced
      5. 4 mint leaves, diced
      6. 4 stalks of cilantro, diced
      7. scant salt
      8. Spread out a spring roll pastry sheet on a dampened work surface
      9. Fill with a line of filling
      10. Fold the near end (away from you) toward the middle
      11. Fold both sides into the middle
      12. Brush the far end liberally with beaten whole egg wash
      13. Roll as tightly as possible
      14. Plunge in hot canola oil (365º) for 60 seconds and let drain
      15. Serve immediately with lettuce leaves

Note: Spring Roll Pastry sheets can be purchased from any store. In a pinch, you can use won ton wrappers. Select the thinnest possible sheets.

Dipping sauce

      • 1/4 C rice
      • 1 tsp soy
      • 1 clove
      • 1 tamarind
      • 2 T sugar
      • Thai chili
      • Canola oil

 

      • 20 rice paper rounds (galettes de riz) – about 8 inches
      • 2 oz cellophane noodles
      • 1 small carrot – use peeler to create strips
      • 1 Kirby cucumber – cut into thin sticks
      • 1 small jalapeno or serrano pepper – seeds and vein removed
      • 1/4 C rice vinegar
      • 1/2 tsp sugar
      • 1 TBL fresh lime juice
      • 1 tsp fresh lime juice (set aside)
      • 4 romaine leaves torn into strips
      • 10 oz packaged baked tofu – cut into 1/4 inch sticks
      • 1 C fresh bean sprouts
      • 1/2 C each – basil, mint and cilantro (total 1.5 C)
      • 1/3 C hoisin sauce
      • 2 TBL chunky peanut butter
      • 2 TBL mirin
      1. Soak noodles in a bowl of boiling hot water for 10 minutes
      2. Blanche carrot in boiling water about 45 seconds, then rinse under cold water
      3. Put carrot, cucumber, jalapeno, vinegar, sugar, 1 TBL lime juice and salt into a bowl and toss to mix.  Let marinate 5 minutes, then drain (reserving liquid)
      4. Drain noodles and rinse under cold water, then pat dry
      5. Snip noodles with kitchen shears, then toss with 1 tsp lime juice in a large mixing bowl
      6. Fill shallow pan with very warm water
      7. In the large mixing bowl, GENTLY toss the noodles, vegetables and tofu
      8. Soak TWO rice paper rounds about 30 seconds
      9. Place on a barely damp culinary towel so that they overlap by about three inches – essentially creating a fat figure eight
      10. Near the lower end of the figure eight, place two pieces of romaine, and top with about 1/8 of the noodle mixture
      11. Roll up tightly around filling, folding in sides
      12. Make 6, 7, 8 more until all ingredients are gone.  You will probably not use all of your rice paper rounds

Mevlut’s Hummus

INGREDIENTS

  • 1-2 C dried garbanzos (chickpeas)
  • 1 tsp baking soda
  • 3 cloves garlic
  • 1/4 C tahini
  • zest and juice from two limes or one lemon
  • 1/2 tsp cumin
  • 1/4 tsp corriander
  • 2 green onions
  • 2 tsp olive oil
  • salt and pepper to taste

STEP BY STEP

  1. Soak beans overnight in water with baking soda added
  2. Next day, drain and rinse once
  3. Drop into boiling water.  Boil 20-30 minutes
  4. Process beans and other ingredients in food processor and put into a serving dish
  5. Create a small “pool” of olive oil in the middle
  6. Garnish with green onions, salt and pepper
  7. Sprinkle ground cayenne (to taste)
  8. Serve with torn pieces of pita bread


Edamame Hummus

Ingredients

  • 1/2 pound frozen shelled edamame (green soy beans), about 1 1/2 cups
  • 1/4 cup tahini
  • 1/4 cup water
  • 1/2 teaspoon freshly grated lemon zest
  • 1 lemon (about 3 tablespoons), juiced
  • 1 clove garlic, smashed
  • 3/4 teaspooon kosher salt
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon chopped fresh flat-leaf parsley
  • Suggested serving: Sliced cucumbers, celery, and olives

Step by Step

  1. Boil the beans in salted water for 4 to 5 minutes, or microwave, covered, for 2 to 3 minutes.
  2. In a food processor, puree the edamame, tahini, water, lemon zest and juice, garlic, salt, cumin, and coriander until smooth.
  3. With the motor running, slowly drizzle in 2 tablespoons of the olive oil and mix until absorbed.
  4. Transfer to a small bowl, stir in the parsley and drizzle with remaining oil.
  5. Serve with the suggested vegetables, or refrigerate, covered, up to 1 day.


Black Bean Hummus

2 CU black beans (drained)
¼ CU sesame seeds
2 TBL virgin olive oil
2 TBL sesame oil (or tahini)
1 tsp sea salt
1 TBL lemon
2 cloves garlic (minced)
1 ½ TBL honey
Paprika for garnish
1 tsp cumin
1 tsp ground red pepper
Onion flakes (to thicken)
Dried chives (to thicken)
5 large black olives (chop course)

Step by Step
1. Puree black beans in food processor
2. Add sesame and olive oil, lemon juice and garlic
3. Heat heavy skillet
4. Toast sesame seeds (about 4 minutes)
5. Mix puree with other ingredients (except olives)
6. Spoon into two small bowls
7. Sprinkle paprika over top
8. Serve with a little bit of olive oil poured on top
9. Serve with bread, crackers – whatever

The key is to puree the beans to a fairly smooth consistency.

1. Try this with any types of beans, even canned 3 bean salad.

Appetizers – COLLECTION

Here is a list of many appetizers that are fairly easy to prepare.  Listed appetizers are from magazines, the Internet, TV shows, with many also created by Grandpa.  Click on the name of an appetizer to see the related photo or the recipe.

An Amuse Bouche is slightly different though than appetizers.

Sprinkle on top or on the plate. Add to taste:

  • Chili flake
  • Fresh oregano
  • Minced garlic
  • Lemon zest
  • Crushed black pepper

Serve with grilled bread or crackers

Here are a few slightly more complex appetizers.

Here are some brief descriptions.  Let your imagination go wild.

  • Antipasta Skewers – Use rosemary twigs for skewers.  Clean twig, leaving a bit on the end.
  • Caprese Cracker – Thin slice of tomato or sun dried tomato, mozzarella and basil leaf.  Garnish with a few drops of EVOO.
  • Chip Scoops – Use a slice of cheese to isolate the chip from the liquid, then add salsa or guacamole.
  • Chicken Nibs – Dip cooked chicken pieces in honey, let drip dry, then roll in sesame seeds.
  • Chocolatey Apricots – Spear apricots on a toothpick, then dip in softened chocolate.  Let cool and set.
  • Donut Holes – Dip in caramel syrup, let drip dry, then roll in crushed praline chips.
  • Endive Scoops – Wash endive leaves, fill with cheese mixture (4 oz goat cheese, 2 oz cream cheese, 1 T parsley, 1 T chives, 1 T lemon zest), top with Proscuitto (crisped in oven at 375º) and top with diced jalapeño (Soaked 5 minutes in hot liquid :: 1/4 C white vinegar, 1/4 C water, 2 tsp sugar, 1 clove garlic)
  • Fried Mozz Stick Wraps – Halve fried mozzarella stick, pair with an avocado slice, then wrap in precooked bacon.
  • Goat Cheese Crostini -Start with a block of goat cheese.  Chop together tarragon, parsley, thyme and mint.  Roll the block into a round log, roll it through the diced greens till much thinner, then wrap and refrigerate.  Put slices on crostini with sundried tomato and a basil chiffonade.
  • Smoked Salmon – Put on cracker and garnish with a bit of fresh ground black pepper.
  • Tomato Dip – Heat EVOO, garlic, tomato, basil and salt.  Blend and serve hot with bread pieces.

The point is:  If it is edible, it can be turned into an appetizer.
