- In a small Cast Iron Skillet
- 1 C Cooked and Shredded Chicken
- 1/2 C Chicken Stock
- 1/4 C Salsa
- 1/4 C Corn
- 1/4 C Beans
- 2 TBL Scallions
- Heat all together on medium high
- In a soup pan combine and heat
- 1/2 C chicken stock
- 1/2 C corn meal
- 1/4 C Cheese
- 1/4 C Green Chili
- 1/4 C Butter
- Cook corn meal mixture until combined
- Put topping onto the shredded chicken
- Sprinkle with 1/4 C cheese
- Bake 400ยบ for 20-30 minutes
- Serve with a spoon onto plates
