Chicken Tamale Casserole

    • In a small Cast Iron Skillet
  • 1 C Cooked and Shredded Chicken
  • 1/2 C Chicken Stock
  • 1/4 C Salsa
  • 1/4 C Corn
  • 1/4 C Beans
  • 2 TBL Scallions
    • Heat all together on medium high
    • In a soup pan combine and heat
  • 1/2 C chicken stock
  • 1/2 C corn meal
  • 1/4 C Cheese
  • 1/4 C Green Chili
  • 1/4 C Butter
    • Cook corn meal mixture until combined
    • Put topping onto the shredded chicken
    • Sprinkle with 1/4 C cheese
    • Bake 400ยบ for 20-30 minutes
  • Serve with a spoon onto plates
