Cast iron skillet
Cut Beef shoulder in large bite pieces
Heavily carmelize beef pieces
. Alternate 85% lean hamburger
Remove meat
Sauté chili base *

Oil
Paprika
Coriander
Bay leaf
Jalapeño
Oregano
Cumin
Coriander
Sugar
Cayenne
Chili powder
Onion
Celery
Bell pepper
Garlic
Add 1/2 cup flour and brown
Add a bottle Pale Ale beer . Room temperature
Simmer to remove alcohol
Add purée *
* Puree
Ancho . Dried and rehydrated 1/2 cup
Canned tomatoes . 1 can
Corn chips . 2 handfuls
Chipotle . 1/4 cup
Peeled hatch or Anaheim chilies
Another can tomatoes with green chilies
1 can red beans . Drained
1 can pinto beans . Drained
2-3 cups chicken stock
Lots of Worcestershire
Return meat to pot
Slow cook about 2 hours or 325° oven
If stovetop, stir occasionally
Plate and top with chives, onion slivers and cheddar cheese
