Chilled Pea Soup
Cook down one diced onion in EVOO
. Soften, don’t brown
Add salt and a few mint leaves
4 cups frozen peas
4 cups stock
Simmer 30 minutes
Blend in small batches
Push through strainer
Pull into ice bath to chill, stirring occasionally
. About 20 minutes
Add 2/3 c buttermilk, salt and pepper
