Crust
- Crumble 28 oz Oreo cookies in a food processor
- Drizzle in 4 oz clarified butter – emulsify
- Bake 10 minutes at 300º – then remove and cook at least 30 minutes
Inside
- Break 24 oz Semi sweet chocolate morsels into a large mixing bowl
- Add 2 tsp vanilla and salt to taste
- Pour in 2 C steaming hot cream and mix gently to dissolve chocolate
- Combine 1/2 C granulated sugar and 4 C whipping cream
- Beat until hard peaks form
- Fold egg whites into chocolate and pour into prepared crust
- Refrigerate at least 4 hours before serving
