- Corn
- Black beans
- Cheddar, Monterey mix
- For Salsa
- Tomato
- Lemon or Lemon
- Red Onion
- Jalapeno
- Cilantro
- Powdered seasonings: garlic, cumin, chili, pepper
- Heat flour tortilla in a hot skillet
- Slice a lime into quarters
- Cut off jalapeno cheeks, and dice – put into a mixing bowl
- Dice your tomato
- Dice a red onion (or thin julienne strips)
- Add just a pinch of powdered seasonings
- Flip tortilla and top with shredded cheeses
- Add corn and black beans to the tortilla
- Chop cilantro and put into your mixing bowl
- Drizzle a bit of oil into the bowl
- Optionally, add a bit more pepper or chili
- Add salsa toppings
- Fold tortilla in half
- Brown both sides
- Clean cutting board and turn out your tortilla
- Cut into four wedges
- Top with cilantro, a lemon wedge, and a bit of sour cream
