- 1 small onion (pieces)
- 1 TBL Extra Virgin Olive Oil
- 1 box frozen chopped broccoli
- 1 C chicken broth
- 1 tsp nutmeg
- 1 TBL butter
- 1 can mushroom soup
- 1 C sour cream
or 1 C heavy cream with 1 tsp sugar
or 1 C sweetened condensed milk
- Soften onion in 1 TBL olive oil
- Add broccoli, broth and nutmeg
- Cook about 5 minutes
- Add butter and mushroom soup
- Bring up to simmer
- Put into blender and add 1 C sour cream
- Serve from blender, or return to saucepan a place at a low simmer until your guests are ready to eat
- Garnish with diced tomato
Serve with Homemade Pita Bread fresh out of the oven
