- Whisk together the dressing
– 1 TBL red wine vinegar
– 1/2 tsp chopped fresh oregano
– 1 TBL EVOO ( emulsifying the oil ) - Combine in a large mixing bowl
– 1 Kirby, Persian or English cucumber
– 1/4 C thinly sliced red onion
– 1/3 C grape tomatoes – halved
– 1 TBL fresh parsley leaves – chopped
– 1/2 tsp fresh dill - Gently combine with dressing
- Top with just a bit of fresh cracked pepper
- Garnish with mint leaves and feta cheese
