INGREDIENTS
- 1 can chickpeas – drained and rinsed
- 1/2 tsp cayenne pepper
- 1/2 tsp black pepper
- 1 tsp baking powder
- 2 cloves garlic
- 2 TBL parsley
- 4 chopped scallions or chives
- 1 tsp EVOO
- 1 tsp ground cumin
- 1 tsp ground coriander
- 2 tsp salt
- Blend all together, then shape into small egg shaped ovals
- Fry in 2 C peanut oil at 350ยบ for about 5-7 minutes each
- Do not overcrowd pan – about 5 at a time
- Spread on a paper towel and sprinkle with salt
- Cool before eating
