Goat Cheese and Veggie Frittata

  • Put 2 TBL EVOO into a nonstick oven-safe skillet
  • Heavily caramelize your onions and set aside
  • Add 1 more TBL EVOO and add zucchini, asparagus, broccolini, cilantro, spinach, and mushrooms
  • Add salt and pepper, and cook until warmed and softened
  • Beat 4 eggs with 1/2 C heavy cream very well
  • Pour over top of your veggies
  • Top with goat cheese
  • Bake at 450º for 12-16 minutes
  • Let rest for 5-10 minutes before cutting
