- Put 2 TBL EVOO into a nonstick oven-safe skillet
- Heavily caramelize your onions and set aside
- Add 1 more TBL EVOO and add zucchini, asparagus, broccolini, cilantro, spinach, and mushrooms
- Add salt and pepper, and cook until warmed and softened
- Beat 4 eggs with 1/2 C heavy cream very well
- Pour over top of your veggies
- Top with goat cheese
- Bake at 450º for 12-16 minutes
- Let rest for 5-10 minutes before cutting
