Irish Sourdough Soda Bread

Ingredients

  • 2 C Whole Wheat Flour
  • 1½ C AP flour
  • 1 tsp Salt
  • 1 tsp Baking Soda
  • ¼ cup Butter (cold and cut into pieces)
  • 1 ½ cups Sourdough Starter
  • 1 cup Buttermilk
  • ¼ cup Honey
  • 1 Egg (egg wash)

Directions

  1. Preheat oven to 350°F.
  2. In a bowl or stand mixer, combine flour, salt, and baking soda.
  3. Cut cold butter into dry mix until crumbly and BB sized.
  4. In a separate bowl mix the sourdough starter, buttermilk, and honey.
  5. Mix the buttermilk mixture into the dry mixture – 1/2 first, then 1/4, finally the last 1/4.
  6. Place the dough on a lightly floured surface and knead 20-30 minutes or until smooth.
  7. Cut dough in half and form two loaves.
  8. Place on a baking sheet, and make and cut an X in the top of each loaf.
  9. Brush with egg wash and bake until 180° F internal (30-45 minutes)
